Description: Polymeric procyanidins (condensed tannins) are present in a wide distribution of plants, occurring in particularly high concentrations in some barks, leaves, and fruits (1). These phenolic polymers complex with proteins and therefore inhibit enzyme activity (2), are important contributors to the flavor of foods (3, 4), and influence the nutritional value of plants (5,6).
